Note, the red-pink color is me dumping Trappey&apos;s Louisiana Hot Sauce all over the carnitas. This time, I decided to hold off on the Sriracha sauce so the carnitas could stand out on their own. I&apos;ll be using this recipe again, as it came out great.&lt;/p&gt;
&lt;p&gt;If you eat this plain, you&apos;re talking a seriously low-carb meal. Well, toss in a few carbs for a dousing with hot sauce, or maybe spring for a low-carb tortilla to roll it up in. But yeah, this is a total low-carb feast. And if carbs don&apos;t concern you, then bang up a load of spanish rice and refried beans and get it on! Whatever floats your boat, or expands your waistline.&lt;/p&gt;
&lt;h1&gt;Ingredients&lt;/h1&gt;
&lt;ul&gt;
&lt;li&gt;4 lbs pork butt, cut into 2-inch cubes&lt;/li&gt;
&lt;li&gt;1 tablespoon Mexican oregano&lt;/li&gt;
&lt;li&gt;1 tablespoon cumin&lt;/li&gt;
&lt;li&gt;1 tablespoon rock salt (I used Hawaiian salt)&lt;/li&gt;
&lt;li&gt;1 tablespoon pepper&lt;/li&gt;
&lt;li&gt;4 bay leaves&lt;/li&gt;
&lt;li&gt;4 tablespoons lime juice&lt;/li&gt;
&lt;li&gt;1 orange, washed, cut in half&lt;/li&gt;
&lt;li&gt;4 cups chicken broth&lt;/li&gt;
&lt;/ul&gt;
&lt;h1&gt;Directions&lt;/h1&gt;
&lt;ul&gt;
&lt;li&gt;Get a big mixing bowl.
&lt;li&gt;Get a pork butt, a pork roast, or some big ol&apos; piece of pork. Cut it into 2-inch cubes. Toss the pieces into the bowl.&lt;/li&gt;
&lt;li&gt;Cut up an onion into coarse pieces. Maybe just a couple of cuts and break it up. Toss the onion into the bowl.&lt;/li&gt;
&lt;li&gt;Get your 6-quart pressure cooker out, and put in 4 cups of chicken broth.&lt;/li&gt;
&lt;li&gt;Add in the oregano, cumin, salt, pepper, bay leaves, and lime juice.&lt;/li&gt;
&lt;li&gt;Get a juicer out (I&apos;m thinking a hand-held, but if you got an electric one, fine.) and juice that orange into the presure cooker.&lt;/li&gt;
&lt;li&gt;Toss in the orange halves into the mixing bowl.&lt;/li&gt;
&lt;li&gt;Add the cubed pork, onion, and orange halves to the pressure cooker.&lt;/li&gt;
&lt;li&gt;Fire up the pressure cooker, and bring up to a boil.&lt;/li&gt;
&lt;li&gt;Cook under pressure for 45 minutes.&lt;/li&gt;
&lt;li&gt;Cool down using the cold-water release method.&lt;/li&gt;
&lt;li&gt;Clean out that big ol&apos; bowl you used earlier.&lt;/li&gt;
&lt;li&gt;Use a slotted spoon, mesh strainer (think wok accessory), or whatever you got to transfer the carnitas from the pressure cooker to the bowl.&lt;/li&gt;
&lt;li&gt;Fish out the big pieces of orange peel. If there are any small pieces, they&apos;ll add a nice orangey flavor to the carnitas.&lt;/li&gt;
&lt;li&gt;The pork should shred nicely. Use tongs to shred the pork up into whatever consistency you like. If you want wetter carnitas, use the remaining broth in the pressure cooker to flavor things up.&lt;/li&gt;

&lt;p&gt;Here is sriracha&apos;s less famous twin, sambal oelek. This is just the thing to spoon into anything being cooked in a wok. Chinese stir fry, Thai noodles, whatever. Slap in a glob of sambal oelek, and it can&apos;t help but be good.&lt;/p&gt;&lt;p&gt;There is a warning which all should heed. I like to start a wok session by getting the wok super hot, then adding in sesame oil to get it on. Thing is, if one adds the sambal oelek right into the hot sesame oil, the resulting toxic cloud of pain will likely clear out the kitchen and possibly empty out the house. But oh it is so good. Oh yeah.&lt;/p&gt;

<title>Low Carb Spicy BBQ Chicken (also good for HCG diet)</title>

&lt;p&gt;Our local hockey club, the Alaska Aces, were eliminated from post-season play, so it is unofficially Summer. And being summertime, nothing says summer like barbecue. My wife likes barbecue chicken when I make it, but she also comments that it never comes out the same. True, because I never record the dry rub recipes I come up with. Well, this time, I did.&lt;/p&gt;
&lt;p&gt;I should note, I&apos;m primarily giving you the recipe for the dry rub itself. It will produce a sufficient quantity of rub to do up maybe a dozen chicken thighs, be they boneless skinless or bone-in skin-on. Or, if you prefer dry, tasteless chicken (unless you are really careful), you can use boneless skinless chicken breasts. Whatever floats your boat. I should note, although they are harder to find, if you get bone-in chicken breasts, they are pretty good.&lt;/p&gt;
&lt;h1&gt;Ingredients&lt;/h1&gt;
&lt;ul&gt;
&lt;li&gt;1 dozen chicken thighs, defrosted, rinsed, basically ready to cook. You figure that part out.&lt;/li&gt;
&lt;li&gt;1/4 cup chili powder&lt;/li&gt;
&lt;li&gt;1/8 cup garlic powder&lt;/li&gt;
&lt;li&gt;1 tablespoon cayenne pepper&lt;/li&gt;
&lt;li&gt;1/8 cup Montreal steak seasoning&lt;/li&gt;
&lt;li&gt;2 tablespoons oregano&lt;/li&gt;
&lt;li&gt;2 tablespoons Truvia (the spoonable kind), or if you like, use pourable Splenda&lt;/li&gt;
&lt;li&gt;1/2 cup vital wheat gluten&lt;/li&gt;
&lt;/ul&gt;
&lt;h1&gt;Directions&lt;/h1&gt;
&lt;ul&gt;
&lt;li&gt;Get a big ol&apos; bowl, something big enough to toss the chicken in. Bigger is better.&lt;/li&gt;
&lt;li&gt;Get a smaller bowl, something big enough for the dry ingredients.&lt;/li&gt;
&lt;li&gt;Get some rubber gloves on. Or latex if you prefer.&lt;/li&gt;
&lt;li&gt;Mix up all those dry ingredients in the small bowl. This is your dry rub.&lt;/li&gt;
&lt;li&gt;Combine the chicken and the dry rub in the big ol&apos; bowl, layering it so you get a good distribution. Since you have gloves on, stir up that chicken over and over, getting the rub coated over all the chicken&lt;/li&gt;
&lt;li&gt;Barbecue (or bake it, or whatever) and enjoy. I don&apos;t know if you are using boneless skinless, bone-in skin-on, thighs, breasts, etc., so you are on your own for cooking times and temps.&lt;/li&gt;

<title>Sriracha oxtail stew</title>

&lt;p&gt;First off, I consider this a work-in-progress recipe. If you have read my other recipes, you probably notice that oxtail factors heavily in pressure cooker recipes. Why? Well, oxtail is awesomly awesome, that&apos;s why. So is sriracha sauce, the Vietnamese hot sauce with the rooster on the bottle. Being a fan of both items, I figured there must be a way to bring them together. So, here is what I&apos;ll call my 1st generation Sriracha Oxtail Stew recipe.&lt;p&gt;
&lt;h1&gt;Ingredients&lt;/h1&gt;
&lt;ul&gt;
&lt;li&gt;1 4-lb package of oxtail, as found at Sam&apos;s Club&lt;/li&gt;
&lt;li&gt;1 bulb garlic, coarsely minced&lt;/li&gt;
&lt;li&gt;2 onions, coarsely chopped&lt;/li&gt;
&lt;li&gt;1 can Ro-Tel&lt;/li&gt;
&lt;li&gt;1 24-oz can tomato sauce&lt;/li&gt;
&lt;li&gt;1/4 cup red wine&lt;/li&gt;
&lt;li&gt;3/4 cup Sriracha sauce&lt;/li&gt;
&lt;/ul&gt;
&lt;h1&gt;Direction&lt;/h1&gt;
&lt;ul&gt;
&lt;li&gt;Brown the oxtail in a 6-quart or larger pressure cooker. Stir as needed to cycle all the pieces around.&lt;/li&gt;
&lt;li&gt;As the oxtail is browning, add in the garlic, and then the onion.&lt;/li&gt;
&lt;li&gt;Add in the remaining ingredients, stir it up to get everything well distributed in the pot.&lt;/li&gt;
&lt;li&gt;Seal the pressure cooker, and cook under pressure for 40 minutes. Cool using the quick release method&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;The result is a pretty stark stew, but does capture the essence of the Sriracha flavor. My next version might use less tomato sauce and perhaps a 1/4 or 1/2 cup of vinegar. Some other vegetables might be a good idea, too. But this will certainly work to get a nice hot bowl of oxtail on the table.&lt;/p&gt;

&lt;li&gt;100 grams 96% lean ground hamburger&lt;/li&gt;
&lt;li&gt;1 clove garlic, minced&lt;/li&gt;
&lt;li&gt;1 teaspoon powdered taco seasoning&lt;/li&gt;
&lt;li&gt;1/4 teaspoon chili powder&lt;/li&gt;
&lt;li&gt;1/2 teaspoon dried onion&lt;/li&gt;
&lt;li&gt;couple of package of hot sauce&lt;/li&gt;
&lt;li&gt;(optional heat) 1 Thai chili, minced&lt;/li&gt;
&lt;li&gt;4 saltine crackers&lt;/li&gt;
&lt;/ul&gt;
&lt;h2&gt;Directions&lt;/h2&gt;
&lt;ul&gt;
&lt;li&gt;Preheat oven to 350 degrees f.&lt;/li&gt;
&lt;li&gt;Get on some latex or rubber gloves, if you wish to stay clean&lt;/li&gt;
&lt;li&gt;Get a large mixing bowl and break up the saltine crackers&lt;/li&gt;
&lt;li&gt;Add in all the remaining ingredients, and mix thoroughly&lt;/li&gt;
&lt;li&gt;Form a small loaf or &quot;meat Twinkie&quot; and place in a baking dish&lt;/li&gt;
&lt;li&gt;Bake for 20 minutes at 350 degrees f.&lt;/li&gt;

<title>Cloning a hard drive over a network using netcat</title>

&lt;p&gt;My wife&apos;s PC has been around for a few years, and I had a newer PC that I wanted to move her onto. Problem was, her old PC only had IDE connectors for the HD, and the replacement only had SATA.
&lt;/p&gt;&lt;p&gt;
Being a linux guy, I whipped out an old removable USB hd I had lying around, and booted up the replacement PC off of an Ubutnu 9.10 CD I keep around for just such purposes, and i used gparted to clone a copy of the replacement PC&apos;s HD off to the USB HD. So the replacement PC is now ready to serve as a true replacement.
&lt;/p&gt;&lt;p&gt;
On her old PC, I fired up an Ubuntu 10 CD, only because I had a separate Ubuntu 10 CD lying around, and for some strange reason, gparted on the Ubuntu 10 CD bombs. Anyhow this ain&apos;t about gparted. So I googled up &quot;copy hard disk over network&quot; and found this: &lt;a href=&quot;http://www.cyberciti.biz/tips/howto-copy-compressed-drive-image-over-network.html&quot; target=&quot;x&quot;&gt;http://www.cyberciti.biz/tips/howto-copy-compressed-drive-image-over-network.html&lt;/a&gt; and it did the trick. But here are the specifics I used which actually worked:&lt;/p&gt;
&lt;p&gt;Both source (her old PC) and target (the newer pc) are booted up using an Ubuntu 9 or 10 LiveCD. On both PCs I fire up a terminal session&lt;/p&gt;
&lt;code&gt;
$sudo su -
#passwd root
&lt;/code&gt;
&lt;p&gt;and I enter a new password for root. I can&apos;t tell for sure if you do or don&apos;t need to do this. I&apos;m just telling what worked for me. So I now have a root terminal session fired up on both source and target PCs.&lt;/p&gt;
&lt;p&gt;Let&apos;s say the target PC&apos;s IP address is 192.168.0.10. Also, let&apos;s say I used gparted on both the source and target to look at the disks, and I determine that /dev/sda is the disk I want to copy on the SOURCE PC, and /dev/sdb is the disk I want to overwrite on the TARGET PC. Very important.&lt;/p&gt;
&lt;p&gt;On the TARGET PC, in that terminal session, I issue the following:&lt;/p&gt;
&lt;code&gt;#netcat -v -p 2222 -l |bzip2 -d | dd of=/dev/sdb bs=16M&lt;/code&gt;
&lt;p&gt;So I see netcat fire up and it says it&apos;s listening on port 2222.&lt;/p&gt;
&lt;p&gt;On the SOURCE PC, in that terminal session, I issue the following:&lt;/p&gt;
&lt;code&gt;#bzip2 -c /dev/sda | nc -v 192.168.0.10 2222&lt;/code&gt;
&lt;p&gt;And it looks like this:&lt;/p&gt;
&lt;code&gt;root@ubuntu:~# bzip2 -c /dev/sda | nc -v 192.168.0.10 2222
Connection to 192.168.0.10 2222 port [tcp/*] succeeded!&lt;/code&gt;
&lt;p&gt;Okay,here is where patience kicked in. I started in 3:00 pm in the afternoon, and it wasn&apos;t done until the next morning! Was it the &quot;bs=16M&quot; in the dd command? Both computers were going at gig speed on the NICs. The disk was 80gb, so that&apos;ll give you an idea. But you know what? It worked! I rebooted the new PC, and Vista fired up. Awesome.&lt;/p&gt;

<title>Mouse, no more ramen for you!</title>

In the morning, lo and behold, there is the mousy culprit. He was a fat one! Doubtless, that mouse was spending the winter eating ramen. I guess mice love ramen. Oh yeah, it was so cold in the garage the mouse was basically frozen, his little tail stuck out, stiff as a board. Oh well, he went into the trash can along with the two ramen packages.&lt;/p&gt;&lt;p&gt;That was yesterday. Today is Saturday. I pull the food off the shelves and search for clues. In the box next to the ramen, I find our deceased rodent&apos;s winter home. We had a box of plastic &quot;Thank You&quot; bags, and he was clearly housed in there. The box reeked of nasty mouse urine, and brown stains were running down the white stack of bags. There were bits of mouse poo throughout it. Well, the bags are in the recycle bin (well, we use a plastic bag for bags, a meta-bag if you will), and the box is in the recycle bin, too. Both mouse traps are now on a silent watch, waiting to catch any other unwanted winter rodent vacationers we may be lodging. But that last guy, he&apos;s eaten his last Top Ramen.&lt;/p&gt;

<title>Yam noodle - the dieter&apos;s friend</title>

I found these at New Sagaya, a local market that carries Japanese products along with other Asian specialties. My favorite joint, Red Apple, doesn&apos;t carry Japanese brands such as Shirakiku, so you might need to look around a bit.&lt;/p&gt;&lt;p&gt;Anyhow, here is the low-down on yam noodle. They stink. Of course they won&apos;t mention that on the bag, but trust me, they smell unappealing. So here is the trick: Before using them, open the package up into a colander, and rinse them under cold water for a minute or so to get most of the smell of them.&lt;/p&gt;&lt;p&gt;For chicken soup or ramen, I toss &apos;em into whatever I&apos;m cooking up so they boil along in there for three minutes or so. They work pretty well like that. As for spaghetti, well, I think I&apos;d boil the noodles in the spaghetti sauce for a few minutes. But yam noodle, yeah. You&apos;ll like &apos;em if you can find &apos;em.&lt;/p&gt;

Anyhow, I plucked it outta the wall socket and doused the tag. It left a black scorch mark on the wall, and the room had that nasty acrid melted plastic insulation smell for a while. Ugh. But yeah, go figure, it was that ridiculous warning tag that actually lit up and started burning. You know, this was the one time in that hairdryer&apos;s life when I did toss it under water. Unplugged, of course. So the only loss was the hairdryer itself. I&apos;d buy another one just like it, but perhaps not &lt;i&gt;exactly&lt;/i&gt; like it...&lt;/p&gt;
